Spaghetti Squash Turkey Bolognese

Who doesn't love pasta?

I know I DO!

But unfortunately it is tough to stay on track with our fitness goals when eating a lot of simple carbs. That is why i love this recipe- it gives me a taste of Italian Food even though it is super health and full of veggies + lean meat.

  • Medium to Large Spaghetti Squash.

  • Tomato Sauce- I used store bought Rao's Sauce (my favorite).

  • 1 lbs Ground Turkey Meat.

  • Fresh Basis to taste.

  • Olive Oil

  • Italian Seasoning

  • 1/2 (medium sized) Sweet Onion already chopped

  • 4 garlic cloves minced

  • Parmigiano Cheese

  • Salt & Pepper


  • Preheat the oven to 400F.

  • Cut the end of the Spaghetti Squash, then cut it in half. Using a spoon remove all of the seeds.

  • Drizzle some Olive Oil inside of the spaghetti squash and then sprinkle salt, pepper and Italian seasoning.

  • Place the two halves face down (skin side up) on an aluminum foil covered baking sheet. Using a fork poke some holes on the top side of the spaghetti squash and then place it in the oven for 30 minutes.

  • Meanwhile, heat up a large pan over medium-high heat. Add about a tablespoon of olive oil and your chopped onion, sautéing for a minute or two.

  • Once the onion is fragrant, add the garlic and sauté for another minute.

  • Add the turkey meat, another drizzle of Olive oil and Salt & Pepper to taste and mix carefully.

  • Fully cook the turkey meat (time will vary).

  • Carefully add the tomato sauce to the pan. The quantity depends on how you like the consistency of your bolognese. If you like it more "meaty" use less sauce, if you like more creamy just add more. I used about 3 cups of sauce on mine.

  • Reduce the heat to low-medium. Mix carefully and then let it simmer for about 5 minutes.

  • Once the Spaghetti Squash is done (it should be a little brown on the inside and soft) remove it from the stove. Using a fork carefully pull the squash apart, it ill look like spaghetti!

  • Grab your plates/bowls and assemble the spaghetti squash, followed by the turkey bolognese sauce, some free basis and parmigiano cheese to taste. Enjoy!
